Father’s Day Feast

Want to make this Father’s Day a real feast for the dads in your life? Here’s one of our easiest recipes that is also a favorite among Simply Fresh Events clients. Start by visiting the local farmers market for the freshest young zucchini you can find. Allow 1 or 2 zucchinis per guest, depending on how many other items you’re serving.

GRILLED ZUCCHINI SPEARS
A favorite recipe from Simply Fresh Events

4 zucchinis, about 5-6 inches long and 3 inches in diameter
½ cup olive oil
¼ cup lemon juice
Garlic powder, salt and pepper to taste
Fresh lemon zest

Preheat outdoor grill to medium. Wash the zucchinis and cut off both ends. Slice the zucchinis lengthwise into quarters to make spears. In a large, sealable plastic bag, mix together olive oil, lemon juice, garlic powder, salt and pepper. Add the zucchini spears and shake gently to coat with marinade. Seal the bag and marinate on the countertop for 5-10 minutes.

Drain the zucchini spears, then lay them flat directly on the grill. Cook 5 minutes and turn over. Cook another 5 minutes (or more, if needed) on the other side until they’re done but still slightly crisp. Watch carefully so that they don’t burn. Just before serving, grate fresh lemon zest over the zucchini. Serves 3-4 guests.
